The Most Wonderful Soup From My Mom


My mom is one of those cooks that just throws stuff together and it taste great. She and my brother and his family went to Olive Garden and had some sort of Chicken Soup there and she loved it. So she went home and tried to come up with a soup that taste like it and this is what she came up with...I think my brother said it was better than Olive Gardens :-)

Hope you enjoy it. We tried it last night and the girls loved it and so did my hubby!

2 c cooked chicken (dark meat like thighs or legs)
1 can cream chicken soup (small can)
1 qt milk
1 - 1/2 c chopped frozen spinach
1 c celery diced and sauteed
2 T dried onions
1 c carrots julienned
4 med potatoes, cut fine
1 t. canadian steak seasoning ( you can get this at Sam's--it's wonderful on all meats. I use it in a lot of different things)
3 t. chicken base flavor (also at Sams cheap)

Saute onions and celery in marg. Cook carrots and potatoes till almost tender. Drain ALL water off carrots and potatoes. Add meat, milk, spinach, seasoning, and cook till good and hot.

Then mix the following to drop SMALL teaspoon size drops of dumplings on top of soup.
1 c plus 1 T bisquick
1/3 c milk

Drop dumplings in soup and cook 10 minutes WITH NO LID then 10 minutes WITH LID (DO NOT OPEN LID TIL COOKED 10 MINUTES) I cooked the dumplings on like setting 3 on electric stove. You want them to simmer not boil out of the pan. If it starts to boil out while lid is on, turn setting down but DO NOT OPEN LID. Sprinkle with italian cheese or parmesan cheese.
