This is a different recipe than what my mom makes.  To me this is a 'lighter' potato soup.  It was delicious and SO easy to make.
8 cups potatoes, diced
3 cans chicken broth (small cans)
1 can cream of chicken soup (large can)
1/4 t pepper
1/3 c onion, diced
1/2 lb bacon, cooked and crumbled
1 (8 oz) pkg cream cheese
Mix potatoes, chicken broth, chicken soup, pepper and onion in a crock pot.  Cook 8-10 hours on low. (I turned mine on high for probably 1-2 hours to get it hot and then turned it to low)  Add cream cheese in the last 30 min. of cooking.  Garnish with bacon when served.
