My Thanksgiving Menu Recipes


My Mom's Dressing

1 box stovetop stuffing mix
1 - 1 1/2 loaf bread (dried in oven on low; crumble up)
4-5 cans chic broth (2-2 1/2 c)
1 onion and celery sauteed in 1 stick marg
1 can drained oysters
salt/pepper to taste
1/2 -1 t sage
poultry seasoning - don't use if using stovetop already seasoned stuffing mix
4 eggs

Mix altogether and bake at 350 til brown on top or firm. 45-60 minutes.

Pumpkin Log

2 large eggs
1 c sugar
1/2 t cinnamon
2/3 c pumpkin
1 t baking soda
3/4 c flour
Filling:
1 c conf. sugar
2 pkgs (3 ounce each) cream cheese
4 T butter
1/2 t vanilla

Grease and flour cookie sheet; set aside. Preheat oven 350. Pour all ingred. on sheet pan. Bake 10-15 min. Sprinkle towel with powdered sugar. Turn mixture out on towel; let cool. Roll in towel for a few minutes. Unroll and spread filling on. Reroll and chill.

Sour Cream Cranberry Salad

1 can jellied cranberry sauce
1 c hot water
1 c boiling water
2 pkg raspberry gelatin
1 c chopped pecans
1 c sour cream

Mix cran sauce, hot water in a blender until smooth. Dissolve gelatin in boiling water, stirring in cranberry mixture and pecans. Put half mixture in 8 inch square pan and chill til firm. Spread sour cream over chilled layer. Add remaining mixture over the sour cream and chill until firm. Slice before serving.

Ruth's Pumpkin Bread

2 c sugar
2 c pumpkin
1 1/2 c oil
5 eggs
2 small pkg instant vanilla pudding (or 1 large)
3 c flour
2 t baking soda
1 t cinnamon
1 t salt

Mix together ingred and bake at 350 for 1 hour. Makes 3 loaves! I use a mini loaf pan and make small ones and give as gifts sometimes!
